Taste the cup.
Texture the milk.
A practical route from “that tastes nice” to useful tasting notes—and from bubbly foam to glossy microfoam without cooking the sweetness out of the milk.

Taste with a structure
Five clues.
No flavour-wheel theatre.
Use the same coffee hot, warm and nearly cool. Write one observation for each clue before looking at the bag. The goal is repeatable language—not guessing the roaster's exact fruit.
Aroma
Smell the dry grounds, the wet brew and the cup after a sip. Start broad: chocolate, fruit, floral, nutty, spice or savoury.
Sweetness
Look for sugar-like impressions—caramel, honey, ripe fruit or chocolate—rather than literal added sugar.
Acidity
Decide whether the brightness feels crisp and pleasant, dull, or sharply sour. Then compare it with citrus, apple or berry.
Body
Notice weight and texture: tea-like, juicy, silky, creamy, syrupy or drying. Milk can make body easier to recognise.
Finish
After swallowing, note what remains, how long it lasts and whether it becomes sweeter, cleaner, bitter or dry.
Steam-wand technique
Stretch first.
Then polish.
Microfoam is milk and tiny bubbles behaving as one glossy liquid. Add air early, then use a stable vortex to divide and integrate it.

Start cold
Use fresh milk at fridge temperature, a clean cold pitcher and only enough milk for the drink. Fill to around the base of the spout, leaving expansion room.

Purge first
Briefly purge condensation from the steam wand into the drip tray. Keep hands away from the steam path.

Set the vortex
Place the tip about 1–2cm below the surface and slightly off-centre. Open steam fully and angle the pitcher until the whole body of milk rotates.

Stretch early
Lower the pitcher just enough for the tip to kiss the surface. A gentle paper-tearing sound adds tiny amounts of air; spluttering means the tip is too high.

Polish the foam
Once the pitcher loses its fridge chill, raise it slightly so the tip sits below the surface. Keep the whirlpool folding bubbles into a glossy, paint-like texture.

Stop before removing
Close the steam valve at the target temperature, wait for steam to stop, then remove the pitcher. Wipe the wand immediately and purge again.

Swirl and pour
Tap only to break an occasional large bubble, then swirl until the milk shines as one liquid. Pour promptly before milk and foam separate.

Milk does not suddenly “burn” at one exact number. The practical warning is quality: as heat climbs beyond the useful range, sweetness fades, foam becomes less stable and cooked flavours become more obvious.
Cold milk gives you time to add and integrate air.
Stop deliberately adding air and keep the vortex polishing.

Check the carton; alternative milks can separate sooner.
Quality deteriorates and the drink becomes uncomfortably hot.

Choose barista formulation
Extra protein, fat or stabilisers usually improve foam stability. Shake the carton and begin at fridge temperature.
Add less air
Plant drinks can expand quickly. Use a quieter stretch and move to the polishing vortex earlier than you might with dairy.
Run cooler
Use 50–55°C as a conservative starting range unless the maker specifies otherwise. Stop immediately if the texture thins or separates.
Colour-code carefully
A dedicated coloured pitcher reduces mix-ups, but it is not an allergen guarantee. Clean the wand, cloth and pitcher thoroughly between milks.

Fast diagnosis
Read the sound
and surface.
Tip is probably too deep or the vortex is not established. Move slightly towards the surface and off-centre.
Tip is too high or air was added too aggressively. Begin again and use a quieter paper-tearing sound.
Too much air, added for too long. Stretch less and spend more time integrating.
Too little air, or air added after the milk became hot. Stretch earlier while the milk is cold.
Temperature may be too high or the drink too acidic. Steam cooler and pour into espresso promptly.
Adjust the pitcher angle and move the tip off-centre until the whole volume rotates without splashing.

What temperature should milk be for a flat white?
For dairy milk, aim for a finished temperature around 60–65°C. Stop slightly earlier on powerful machines because the milk and pitcher can continue warming after steam is closed.
When does steamed milk taste burnt?
There is no single instant burn point, but texture and sweetness deteriorate as milk moves above roughly 65°C. Treat 70°C as a do-not-cross quality limit.
What temperature should oat or soy milk reach?
Start cold and follow the carton. A conservative home starting point is about 50–55°C; many plant drinks separate or lose texture sooner than dairy.
Why does my microfoam have large bubbles?
The wand tip is usually too far above the surface, air is being added too late, or there is no stable vortex to fold bubbles back into the milk.
Do I need a milk thermometer?
It is useful while learning and when changing machines or milks. Place it so it reads the milk rather than steam, and allow for response delay.
Can I steam leftover milk again?
Avoid re-steaming. Texture and flavour decline, and combining old warm milk with fresh cold milk makes temperature and hygiene harder to control.
